Ingredients (Makes 2)
10cl Gin Bothy Blueberry Gin
200ml sparkling water
Juice of 1 lime
4 scoops of ice cream
Crushed ice
Blueberry Puree (recipe below)
Method
Fill the bottom of the glass with the purée you made earlier, add ice, pour the gin over the top and a squeeze of lime, add the sparkling water until the glass is three quarters full. Top with 2 scoops of ice cream to each glass, give it a good mix up with a spoon and finish with a straw.
To make the blueberry puree: (double the ingredients if you think you will have more than 1 serving),
1½ cups of blueberries
½ cup of sugar
½ cup water
Juice of half a lime
5 basil leaves
Bring to the boil and simmer on a medium heat for 5 minutes, then blitz in a food processor.
